Organic White Zucchini bake

Morning market trip encountered some beautiful organic white zucchinis, the size of which are perfect for a stuffed zucchini bake. Dug out the flesh, sauteed them with the spicy anchovy and eggplant base with plenty of olive oil, and stuff them back into the shell layered with slices of mushrooms. Top with cheese and bake. Finish it with an over-easy egg (runny yolk of course), just to smooth out the intense heat. Nutritious, healthy, low carb with long lasting energy and delicious!
